BEFORE DAY1 |
Memorize all cuts of meat. Be Familiar with The Speech. Read your training manual in its entirety. Watch all the videos listed below. ARRIVE PREPARED. |
DAY1 FIRST HALF |
Arrive 3:00PM. Trainer will go over the training manual (up to the end of DAY1 in the integrated training manual-iPad) with the trainee (in the allotted time). Teach proper serving rules i.e., (serve from left and clear from right). Turn over newhire to Gaucho Trainer at the end of Day1 in the manual. |
DAY1 SECOND HALF |
Explain the meat service and name of the meats. Explain server's white notes with table/meat/temp requests. Show proper storage places to put meats and marinades. Show how to use paddle and hold a knife, and how to talk to customers (serving a table - serve left and clear right). Teach cleaning procedures (grillroom and meat prep room) during and after the shift. |
DAY2 | Arrive 3:00PM. Follow a Gaucho on the floor and watch how to serve meats, explain more details about meat service, customer special meat requests, how to talk to customers, manage the floor and control meats on the grill. Point out daily chore sheet in the grill room to be completed. |
DAY3 |
Arrive 4:30PM. Start serving with a Gaucho shadowing you and correcting you with details about the service. |
